Ramen Noodle Salad with Peanut Butter Dressing

Equipment

  • Medium Pan
  • Large Bowl for mixing salad

Ingredients

  • 4-5 cups Coleslaw Mix
  • 2 blocks Ramen noodles
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • ½ cup Green Onion
  • cup Roasted Salted Peanut

For Creamy Peanut Dressing

  • 4 tablespoon Creamy Natural Peanut Butter (unsweetened)
  • 2 tablespoon Soy Sauce
  • 2 tablespoon Honey
  • 1 tablespoon Rice Wine Vinegar
  • 1 tablespoon Fresh Lemon Juice
  • 1 tablespoon Warm water
  • 1 clove Garlic minced
  • ½ teaspoon Fresh ginger grated
  • 1 teaspoon Sriracha
  • ½ teaspoon toasted sesame oil

Instructions

Asian peanut butter salad dressing

  • In a medium bowl , mix all the ingredients.
  • You can add water if you feel this is too thick for your liking to make it more runny.
  • Add some chili flakes as per taste to make it a bit spicy.

Salad

  • Break Ramen noodles into small pieces. Basically, crumble the ramen.
  • In a large bowl, mix all the ingredients along with the peanut butter salad dressing.
  • Serve it along with sides.

Notes

  • Cut onion to bite-sized pieces.
  • The carrots should be sliced to matchstick size preferably.
  • It is important to first cook the ramen noodles as per package instructions.
  • When the noodles are cooked, rinse them thoroughly in water to get rid of the starch from the exterior of the noodles.
