Honey Cornmeal Muffins with Cranberry  Jam

Moist & flavorful muffins with cranberry jam are perfect with a cup of coffee or as your breakfast.

  • 1 cup Cornmeal Fine Yellow
  • 1 + ¼ cups All purpose flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon salt
  • ¾ Cups Sugar
  • 2 eggs
  • 120 gm butter , Melted and cooled
  • ¼ cup honey
  • ¾ cups milk , Room Temperature
  • ½ cup Cranberry Jam


  • 1. Pre-Heat oven at 375 degree Celsius. Prepare muffin tray by lining Paper liners or grease it.
  • In a big mixing bowl add all the dry ingredients. Mix well.
  • In another bowl beat 2 eggs lightly. Add honey, melted butter and milk to egg. Mix everything
  • Add the wet ingredients to the dry ingredients. Mix until everything just incorporated. Don't overmix. A little bit of dry ingredient here and it is absolutely fine.
  • Using a small ice-cream scoop, fill the cup till ¼. At the middle spoon ¼ tsp. Fill rest of ½ with the batter. Fill all the liner cups similarly with batter and jam.
  • Bake in the middle oven rack for 18-20 minute or till wooden skewer comes out clean.
  • These muffins are best-served warm.
