Bruschetta with Ricotta and Strawberry Salsa

Ingredients

  • 2 cups strawberries Fresh , hulled and sliced
  • 1 Onion small , chopped
  • 1 tbsp Ginger Freshly grated
  • 1 tsp Olive oil
  • ½ cup cilantro Chopped (I used coriander leaves)
  • ¼ cup basil Chopped fresh leaves
  • ¼ cup Mint leaves Chopped fresh
  • 1 tbsp Balsamic vinegar
  • pinch salt a big
  • pinch black peppercorn Fresh crushed a big
  • Dash honey ( optional, the strawberries were bit sour I added it)

For Bruschettas

  • 1 cup ricotta cheese fresh
  • baguette French , cut in to slices

Instructions

  • In a big mixing bowl add all the ingredients except strawberries and onion. Mix well.
  • Add sliced strawberries and onion. Give it a good mix. Chill it in the refrigerator while preparing the bread.
  • On a hot griddle pan toast the baguette slices on both the sides.
  • Spread ricotta on each slice and top it with chilled strawberry salsa.

Notes

Note:
1. The strawberries were bit sour ,so I had to use a good dash of honey to bring the balance. If the strawberries are sweet then skip honey and add a dash of lemon juice.
2. Try not to keep the salsa for too long as strawberries release a lot of water and it will loos the texture and crunch.
