Kimchi Fried rice with tons of flavor from Kimchi, Gochujang, and soy sauce, is one of the best ways to jazz up leftover rice.
Prepare the kimchi - Drain kimchi juice, reserve and then chop kimchi.
Make the sauce. Stir together gochujang, soy sauce, and the drained kimchi juice
Sauté the chopped green onions for few seconds.
Add the chopped Kimchi. Simmer the kimchi for two minutes. it becomes aromatic and begins to caramelize.
Add in the sauce prepared in step 2 and give it a good mix.
Cook the sauce until it the mixture looks thick.
Toss in the cooked rice and gently mix it until the rice is coated with the mixture and let it cook for few minutes..
Add the green onion, toasted sesame oil, and soft butter. Remix till well combined.
garnish the Kimchi Fried Rice with fried eggs, seaweed strips, chopped green onions sesame seeds and its ready to be enjoyed.
