Greek-style zucchini fritters, known as "kolokithokeftedes," are crispy, flavorful patties made from grated zucchini, fresh herbs like mint and dill, and feta cheese.
Grate the zucchinis and place them in a colander
Sprinkle some salt to the grated zucchini.( for crispy fritters)
Drain extra water from the zucchini.
Squeeze the grated zucchini using a clean kitchen towel or cheesecloth
Add rest of the ingredients to the grated zucchini. and prepare the mixture.
Take small handfuls of the mixture and form into patties or small balls. Flatten them slightly. and fry until golden brown and crispy on both the sides.
Serve the kolokithokeftedes warm with a side of tzatziki sauce for dipping.
