Prepare the Peri Peri Sauce . Add in all the ingredients required for making peri peri sauce to a food processor and blend till smooth.
Add approximately 1/2 cup of the prepared peri peri sauce to the chicken thighs and ensure they are thoroughly coated.
Arrange a layer of quater sized cut potato.
Arrange the marinated chicken thighs on top of the potatoes. and let it bake covered for 30-35mins followed by basting the chicken in between and bake until the chickens are properly cooked.
