Bay area style garlic noodles that is a perfect Asian-western fusion dish. Loaded with garlicky, butter goodness. Big on umami, all thanks to Fish sauce, soy sauce and oyester sauce.
Make the stir-fry sauce by mixing soy sauce, oyster sauce, fish sauce, and sugar.
Cook noodles as per package instructions. ( no need to salt the cooking water, as the recipe contains lots of salty sauces. You can adjust the salt towards the end if needed).
Melt butter and oil in a wok or skillet. When lightly warm, cook garlic on low heat until light golden brown color. Keep a close eye towards the end to avoid burning garlic. Reserve 2 teaspoons of crispy garlic for garnish.
Quickly add the prepared sauce, 1/3 cup noodles cooking water. Simmer for 1-2 minutes.
Add cooked noodles and pepper. Toss well to coat with sauce.
Finish it off with grated parmesan cheese and sliced green onion. Toss again. (check seasoning and add more salt if required).
While serving garnish with reserved crisp garlic, sliced green onion, and more parmesan cheese.

Notes
Use fresh and finely grated parmesan cheese for the best flavor. Pre-grated parmesan cheese often has an anti-caking agent.
Use finely minced garlic. Don't crush garlic into a paste, as it will stick to the pan. You can also use thinly sliced garlic.
