Cheesy Hot Corn Dip is going to be a showstopper in your party menu. Bubbly cheese, sweet corn and lots of flavourful ingredients make this appetizer really delicious.
In a pan add butter. Add a couple of drops of oil (Tip - to avoid butter from burning).Add minced garlic. Once the garlic starts browning, add chopped onion. Cook till onion looks transparent.
Add red bell pepper. Saute till it is soft and looks transparent(roughly for 5 minutes). Remove from heat and keep aside.
In another bowl add corn, cheeses, sour cream, hot sauce, green onion, salt, black pepper, chilli flakes (if using). Add sauteed onion mixture. Mix well.
Pour the mixture into an baking dish. Bake for about 20 to 25 minutes, or until the top is golden brown and the edges are bubbling.
Serve hot out of the oven with nachos/chips/chopped veggies.
