Maple Bacon Sweet Potato Hash with a hint of cinnamon and rosemary is easy to make. A perfect Thanksgiving side dish or serve as breakfast along with a fried egg.

Ingredients

  • 2 Medium Sweet Potatoes diced
  • 7-8 bacon stirps Cut into bite-size pieces
  • 1 tablespoon Butter
  • 1 tablespoon Maple Syrup
  • ½ teaspoon Cinnamon Powder
  • ¼ teaspoon salt
  • 1 sprig Rosemary

Instructions

  • Heat a skillet and add chopped bacon to it. On medium heat cook bacon until brown and crispy.
  • Using a slotted spoon remove cooked bacon from the pan and keep aside on a paper towel.
  • Reserve 1 teaspoon of bacon fat and discard the rest ( or save to use it later)
  • Add butter, When it melts add diced sweet potato to the pan.
  • Sprinkle rosemary, salt and cinnamon. Mix well. Cover and let it cook for 10-12 minutes. Stir in-between to prevent sticking.
  • When sweet potato pieces are almost tender, stir in maple syrup and cooked bacon to the skillet. Cook for another 5-6 minutes uncovered, stirring occasionally.
