Maple Bacon Sweet Potato Hash

Maple Bacon Sweet Potato Hash with a hint of cinnamon and rosemary is easy to make. A perfect Thanksgiving side dish or serve as breakfast along with a fried egg.

Ingredients

  • 2 Medium Sweet Potatoes diced
  • 7-8 bacon stirps Cut into bite-size pieces
  • 1.5 tablespoon Butter
  • 1 tablespoon Maple Syrup
  • ½ teaspoon Cinnamon Powder (ref note 1)
  • ½ teaspoon Garlic powder
  • ¼ teaspoon Paprika
  • 1/4-1/2 teaspoons Salt
  • 1-2 sprigs Rosemary

Instructions

  • Heat a skillet and add chopped bacon to it. On medium heat cook bacon until brown and crispy.
  • Using a slotted spoon remove cooked bacon from the pan and keep aside on a paper towel.
  • Reserve 1 teaspoon of bacon fat and discard the rest ( or save to use it later)
  • Add butter, When it melts add diced sweet potato to the pan.
  • Sprinkle garlic powder, paprika, salt and cinnamon. Mix well. Add rosemary sprig. Cover and let it cook for 8-10 minutes on medium heat. Stir in-between to prevent sticking.
  • When sweet potato pieces are almost tender, stir in maple syrup and cooked bacon to the skillet. Cook for another 2-3 minutes uncovered, stirring occasionally.

Notes

  1. If you are serving as part of your holiday table, then increase the cinnamon amount to 3/4th teaspoon. 
  2. Add maple syrup towards the end, to avoid it from burning.
