Maple Bacon Sweet Potato Hash with a hint of cinnamon and rosemary is easy to make. A perfect Thanksgiving side dish or serve as breakfast along with a fried egg.
Heat a skillet and add chopped bacon to it. On medium heat cook bacon until brown and crispy.
Using a slotted spoon remove cooked bacon from the pan and keep aside on a paper towel.
Reserve 1 teaspoon of bacon fat and discard the rest ( or save to use it later)
Add butter, When it melts add diced sweet potato to the pan.
Sprinkle garlic powder, paprika, salt and cinnamon. Mix well. Add rosemary sprig. Cover and let it cook for 8-10 minutes on medium heat. Stir in-between to prevent sticking.
When sweet potato pieces are almost tender, stir in maple syrup and cooked bacon to the skillet. Cook for another 2-3 minutes uncovered, stirring occasionally.
Notes
If you are serving as part of your holiday table, then increase the cinnamon amount to 3/4th teaspoon.
Add maple syrup towards the end, to avoid it from burning.
