Apple Slaw With Cranberry

Crunchy apples, Cabbage, carrot, Tart Cranberries in a creamy dressing, this Apple Slaw is healthy and easy to make. A perfect side dish to serve and can be made in just 10 minutes.

Ingredients

For Apple Slaw Mix

  • 2 Apple Red and Firm
  • 2 cups Cabbage Shredded
  • 1 cup Carrot cut into matchsticks
  • ½ cup Celery Thinly Sliced
  • cup Dried Cranberries
  • cup Toasted Almond sliced

For Slaw Dressing

  • cup Greek yoghurt
  • cup Mayo
  • 2 tablespoon Apple Cider Vinegar
  • 2 tablespoon Honey
  • 2 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste Freshly ground

Instructions

  • if using dried cranberries, add hot water to cranberries. Let it soak for 5 minutes, drain well while you prep other ingredeints.
  • Cut apple into thin match sticks.
  • Toast almonds and roughly chop. Or if using sliced almonds, toast it well.
  • Mix all the ingredients for dressing.
  • In a big salad bowl add all the ingredients for the slaw. Pour the dressing. Mix everything well.
  • Serve as a side dish. Enjoy!

Notes

  1. To prevent sliced apple from browning, add water after slicing and a big squeeze of lemon. Drain well and run under normal water before using. 
  2. Toasting almonds enhances the nuttiness, so I suggest don't skip it.
