Ingredients

  • 4 soft  flour tortillas (8 inch dia)
  • 1 tablespoon butter
  • 4 large eggs
  • ¼ cup full-fat Milk
  • salt and pepper to taste
  • 200 grams Breakfast Sausage
  • 1 medium Onion
  • ½ red bell pepper chopped
  • 2 strips bacon chopped
  • ¼ cup green Onion
  • 1.5 cups shredded Mexican blend cheese

Instructions

  • Begin with cooking chopped bacon until crispy. Keep bacon aside in a bowl and discard excess bacon fat.
  • Whisk together egg, milk, salt, and pepper using a fork.
  • Heat butter in the same pan used above. Pour the beaten egg mixture. When it starts to set around the corner (15-20 seconds) using a spatula break the mixture and stir.
  • When the egg is cooked through but it still looks creamy remove from heat and keep it aside.
  • To the same pan add crumbled breakfast sausage, chopped onion, and peppers. Cook until the sausage is cooked and the onion has softened.

Assembling Quesadilla - Method 1

  • Sprinkle cheese on one half of the tortilla. Top it with scrambled egg, sausage mixture, more cheese, crispy bacon, green onion. Fold the tortilla over.

Assembling Quesadilla - Method 2

  • Another method of assembling is to place the tortilla. Sprinkle shredded cheese evenly leaving a little space around the edges.
  • Spread cooked egg, sausage evenly. Top it with crispy bacon, green onion, and sprinkle another layer of shredded cheese.
  • Place another tortilla on top.

Cooking Quesadillas

  • Carefully place filled tortillas on a hot non-stick skillet. Cook until the cheese melts and the tortilla gets crisp. Flip and cook for another 2-3 minutes.
  • Transfer the quesadilla to a chopping board. Using a sharp knife or pizza cutter cut and serve with sour cream or salsa.
