Cajun seasoning takes these smashed potatoes up a notch. Potatoes are perfectly seasoned, butter adds richness and once baked the potatoes have a crisp edge and a soft interior
Wash and clean the potatoes. In a large pot bring enough salted water to a boil. Add cleaned potatoes and cook till done.(The potatoes should be just cooked, not mushy and overcooked)
Pre-heat oven to 200 degree celsius/ 400 F.
Drain the potatoes once cooked and let it cool down a little bit. If you want to roast potatoes without skin then remove them.( I have kept the skin on here).
Add cooked baby potaotes to the baking tray. ( divide between 2 baking sheet to avoid crowding)
Toss the potatoes with 2 tablespoons of butter and oil each. Using a glass or a bowl with flat bottom/potato smasher, gently press and flatten the potatoes. Bake for 20-25 minutes until the potatoes are crispy around the edges.
In a big mixing bowl remaining melted butter, oil, and Cajun spice. Mix well.
Brush the spice mixture evenly on both the sides of half baked potatoes.
Bake for another 20 minutes till the potatoes look crispy and caramalized. Once they are done remove the baking tray from oven carefully.
Notes
Packaged Cajun seasoning could be spicy, so use it accordingly.
