Preheat the oven to 400 degrees F. Coat a small cast iron skillet or heatproof dish with non-stick spray.
Roughly chop shrimp into medium-sized pieces. Each shrimp into 2-3 pieces.
Heat butter in a small ovenproof cast iron skillet pan. Add chopped shrimp and old bay seasoning.
Cook shrimp for 3-4 minutes or until shrimp are pink and opaque.
In a bowl add Cream cheese, shredded cheese, sour cream, garlic powder, smoked paprika, flour, pepper and chopped green onion. ( Add very little salt as rest of the ingredients already have salt in them). Mix everything (use a hand blender to whisk well). Fold in the cooked shrimp along with any liquid in it.
Use the same Iron skillet used to cook shrimp or a small ovenproof casserole dish, shift the shrimp cheese mix.
Bake in a pre-heated oven for 10-12 minutes until bubbly around the edges.
Garnish with chive/green onion and a good sprinkle of old bay seasoning while serving.
Notes
Variations - You can also add chopped bell peppers to the mix. I also add crispy bacon pieces to it.
Instead of Old Bay seasoning, you can also use Cajun seasoning.
Shrimp - I sometimes increase the quantity of shrimp. If using frozen shrimp, thaw it completely before cooking.
