Hot Shrimp Dip

This cheesy hot Shrimp Dip with Bacon with juicy shrimp and three types of cheese is a showstopper on your party appetizer menu.

Ingredients

  • ½ pound Shrimp cleaned
  • 2 teaspoon Old bay seasoning
  • 1 tablespoon Butter
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon Pepper (or adjust as per taste)
  • ½ teaspoon Salt (or adjust as per taste)
  • 6 ounce Sour Cream (at room temperature)
  • 6 ounce Cream Cheese (at room temperature)
  • 2 cups Cheese (blend of cheddar and mozzarella)
  • 1 teaspoon flour
  • 3 tablespoon chopped Chiv/green onion

Instructions

  • Preheat the oven to 400 degrees F. Coat a small cast iron skillet or heatproof dish with non-stick spray.
  • Roughly chop shrimp into medium-sized pieces. Each shrimp into 2-3 pieces.
  • Heat butter in a small ovenproof cast iron skillet pan. Add chopped shrimp and old bay seasoning.
  • Cook shrimp for 3-4 minutes or until shrimp are pink and opaque.
  • In a bowl add Cream cheese, shredded cheese, sour cream, garlic powder, smoked paprika, flour, pepper and chopped green onion. ( Add very little salt as rest of the ingredients already have salt in them). Mix everything (use a hand blender to whisk well). Fold in the cooked shrimp along with any liquid in it.
  • Use the same Iron skillet used to cook shrimp or a small ovenproof casserole dish, shift the shrimp cheese mix.
  • Bake in a pre-heated oven for 10-12 minutes until bubbly around the edges.
  • Garnish with chive/green onion and a good sprinkle of old bay seasoning while serving.

Notes

  1. Variations - You can also add chopped bell peppers to the mix. I also add crispy bacon pieces to it. 
  2. Instead of Old Bay seasoning, you can also use Cajun seasoning
  3. Shrimp - I sometimes increase the quantity of shrimp. If using frozen shrimp, thaw it completely before cooking.
