Bacon Wrapped Chicken Bites

These bacon wrapped chicken bites are crazy good and are a must for parties. Bite-sized chicken pieces are tossed in a sweet and spicy blend, wrapped in bacon strips, and baked. At first, you bite into smoky crispy bacon, and then comes the juicy moist chicken.
You can make these ahead of time and pop ’em in the freezer. Bake them right from frozen when guests show up at your door. You can also pop them in an air fryer.
Ingredients for Bacon wrapped Chicken bites
- Chicken– Boneless chicken breast cut into 1.5 -2 inches bite-size pieces. Chicken thighs are fatty/dark meat and will not work for this recipe.
- Bacon– Not thick sliced. Cut bacon strips into half.
- Seasoning – Garlic powder, onion powder, brown sugar, paprika, cayenne pepper, rosemary, salt and pepper

Recipe Tips
- Make sure chickens are cut into even sized pieces and are at room temperature for even cooking.
- Baking the bacon-wrapped chicken on a wired rack helps hot air circulation and bacon crisps up evenly. Also, the extra fat from bacon drips and gets collected on the baking tray.
- Line the baking tray with an aluminum foil, for easy clean-up.
- If you can, after tossing chicken with the seasoning, let it sit for 30 minutes – 1 hour in the refrigerator for the flavors to develop.

Bacon Wrapped Chicken bites
Ingredients
- 2 chicken breasts boneless and skinless, cut into 1 inch – 1.5 inch cubes
- ¾ cup light brown sugar lightly packed
- 1 teaspoons garlic powder
- ½ teaspoons Onion powder
- 1 teaspoon fresh rosemary minced
- 1 teaspoon paprika
- ¼ teaspoon Cayenne pepper or to taste
- ½ teaspoon salt or to taste
- ¼ teaspoon pepper or to taste
- 12-15 slices bacon thin cut, cut into halves or thirds
- 1 tablespoon parsley for garnish
Honey Mustard Dip
- ½ cup Mayo
- 2 tablespoon whole grain mustard
- 2 tablespoon Dijon mustard
- ⅓ cup Honey
- ½ teaspoon garlic powder optional
- ¼ teaspoon Cayenne pepper optional
Instructions
- Preheat the oven to 400 degrees F. Spray a cooking rack with nonstick spray.
- In a bowl stir together brown sugar, garlic powder, onion powder, rosemary, cayenne pepper, paprika, salt, and pepper.
- Add chicken bites to the above seasoning mix and toss to coat.
- Wrap each chicken pieces in a strip of bacon. Insert a toothpick through the chicken to secure the bacon.
- Repeat the process with the remaining chicken. Place them all on a wired rack.
- Place the wired rack on a foil-lined baking tray.
- Bake it for 15-20 minutes.
- Garnish fresh parsley while serving.
