Here I am with the first post of 2016. A warm start of the new year. We both sat together and started talking about the year ahead. This year is going to be a quite happening one. We sat for a long time talking while sipping warm cup of coffee. I quickly whipped up this Gingerbread Pancakes.
Because this year we are a bit serious about our health and weight loss, I tried it to make it healthy. Year 2015 was all about food for both of us and somehow we were not able to concentrate on healthy eating. We are going to make it right this year by having a well-balanced diet. So you can tell this is one of our new year resolutions.
I have used here honey as the sweetener. You can use sugar or molasses too. I tried substituting all purpose flour partially with Whole wheat flour. Drizzle it with lots of maple syrup or honey and top it with lots of fruits.
